Easy Frito Pie Recipe – everyone LOVED this easy recipe! Ground beef, onion, beans, enchilada sauce, crunchy Fritos, and lots of cheese. Top the casserole with your favorite taco toppings. This easy dish is great for busy weeknights and potlucks. Add this to your menu! It is sure to be a hit with the whole family!
Preheat oven to 350ºF. Spray a 9×13-inch pan with cooking spray. Set aside.
In a large skillet, cook ground beef until no longer pink. Drain fat. Return meat to pan. Stir in onion flakes, beans and enchilada sauce.
Pour half of Fritos into prepared pan. Top with meat mixture. Sprinkle cheese over meat mixture. Top with remaining chips.
Bake for 25 to 30 minutes. Sprinkle with chopped green onions.
Notes:
Can substitute ground turkey or ground chicken for a lower calorie option.
I used Ranch Style Beans in this chili. They are near the chili beans. If you can’t find them, you can substitute chili beans, kidney beans, or pinto beans. Black beans are also delicious.
For extra flavor, add a packet of taco seasoning or chili seasonings to the beef mixture.

Is Frito Pie spicy? No. If you want a spicier dish, add a can of green chilies or Rotel diced tomatoes and green chilies.
You can use any shredded cheese that you enjoy. Cheddar cheese, Monterey jack, a Mexican cheese blend, or pepper jack all work great!
Can Frito Pie be made in advance? Yes. I suggest making the ground beef mixture ahead of time and refrigerating it until you are ready to assemble and bake the casserole. If you assemble the casserole ahead of time, the Frito chips will get soggy.
